After XCode forcing me to do an update yesterday, Visual Studio for Windows stopped showing any of the iPhone simulators, -Visual Studio for Mac works fine-

Thanks for the report.  This is an incompatibility of the current Xamarin.iOS and Visual Studio versions with Xcode 9.3.  Work is underway to publish an Xamarin.iOS and Visual Studio versions with Xcode 9.3 compatibility as soon as possible.  In the mean time it is recommended to reinstall Xcode 9.2.

(As a side note, I have started a discussion with the Xamarin.iOS team to recommend that Xamarin.iOS and Visual Studio provide a warning to users when a new incompatible version of Xcode is released on the App Store before the current version of Xamarin.iOS and Visual Studio is compatible with that version.)
