The classes CVOpenGLESTexture and CVOpenGLESTextureCache are in the OpenTK .dll, not the Xam.iOS 10 DLL. Intentional? (If so, I will make a note in the API docs.)

Yes, this is intentional, because these types reference other types in OpenTK.dll:

    public CVOpenGLESTextureCache  {
        public CVOpenGLESTextureCache (OpenGLES.EAGLContext context) {}
    public class CVOpenGLESTexture {
        public OpenTK.Graphics.OpenGL.TextureTarget Target { get; }
