This is not MonoTouch specific, or even Xcode / iTunes specific.

iOS 5.1 devices do not return the UDID. The same code works for devices with earlier iOS releases.

Workarounds, for tools that still requires the UDID, is to use Xcode (Organizer) or iTunes. The latest version both (still) shows the UDID.

For iTunes you have to click on the "Serial Number" label (in the device's Summary tab) to make it switch to "Identifier (UDID)".
