this resolved bug and you do not yet see a matching new report.
The Info.plist that MonoDevelop builds for me contains a "Icons" entry for all my icons, but it does not contain a "Icon Files (iOS 5)" entry. This is mandatory now (sorry, no other reference then http://stackoverflow.com/questions/7787178/app-icon-not-changing-when-app-version-is-updated-in-ios-5-simulator).
When I build an AdHoc release without the iOS5 entry but with a correct "Icons" entry I do not get an icon after installing.
It is possible to manually add any entry you want using the advanced editor view for the plist editor. However, this particular entry has been added to MonoDevelop and will be in the context menu if you just update to a newer version to gain the ability to set this.
