iPad only apps should (automatically) be compiled with -armv7, so that they can be uploaded to the AppStore.
This change isn't really hard to make, but we also need to make sure it's tested properly by QA.

Maybe we should change it so that we default to armv7, and then add armv6 if also compiling for an older device.
You mean change mtouch? That would technically be a breaking change, we'd have to sync it up with a new MD version.
