AVCaptureManualExposureBracketedStillImageSettings defines  it's properties as read-only
@property(readonly) CMTime exposureDuration
@property(readonly) float ISO
AVCaptureAutoExposureBracketedStillImageSettings seems identical 
@property(readonly) float exposureTargetBias
Are you talking about them ? something else ?
I was transcoding an Apple example app from Objective-C and they were setting the properties directly (I guess this has changed).
My bad, you have a Create binding on AVCaptureAutoExposureBracketedStillImageSettings that I missed before.... mark this bug as closed.
Apple rarely update* its samples after WWDC so they bitrot during the summers (WWDC to iOS releases).
* some of them become official SDK samples and will be maintained, from time to time
