Steps to Reproduce:
Create an iOS project. I created a project from Universal Empty template.
Go To Properties-iOS BundleSigning
Click on Identity drop down. Different available provisiong profiles do appear.
Change the configuration type and click on identity drop down.
Available provisioning profile must still appear in the dropdown'
Provisioning Profile options are reset to Developer and Distribution (Automatic).

If this doesn't block deployment we'll probably just have to get it in 1.8.

I am seeing this as well.
Today I have checked this issue with the latest stable build XVS 3.11.666 and I am not able to reproduce this issue. I observed that after changing the configuration type and clicking on identity drop down all available provisioning profile appears in the dropdown. Please refer the screencast for the same.
This issue seems to fix me and it is working fine at my end, hence as of mow I am closing this issue. If anyone face this issue again so feel free to reopen this issue.
