It would be nice if you could override the XCode location on a per project basis. This would be really useful on CI servers, or when supporting multiple versions of an app which require building with older versions of XCode.
I don't think we'll add UI for this, but it should be possible to do it via MSBuild properties when we move to MSBuild for iOS projects.

This should be relatively straightforward to implement now we've moved to MSBuild/xbuild.

This should also support using different Xcode locations for different projects in the same solution (see bug #59756)
