The Remote Build seems to be ignoring the "iOS Bundle Signing" Identity and Provisioning Profile as set in the project properties. Perhaps I'm missing some simple step?
Steps to reproduce:
1. Create a new iPhone HelloWorld application in Visual Studio.
2. Switch to the Ad-Hoc build configuration.
3. Open the project properties, and set the "Identity" and "Provisioning profile" to use a _Distribution_ profile.
4. Save the project properties.
5. Select "Build -> Build IPA".
6. Unzip the resulting IPA on the build server, and run `codesign -dvv` on the `.app` directory.
The `.app` is signed with a _Developer_ identity instead of a _Distribution_ identity. In brief testing, it looked like this was also true when using the Release or AppStore build configurations ("Build -> Deploy HelloWorld"). Selecting "Distribution (Automatic)" vs. picking specific Identities and Profiles did not change the result.
The `.app` is singed with the _Distribution_ identity. This is the result with Xamarin Studio on Mac.

This is a known issue and I'm working on a fix for it.
I believe this is the issue reported here to - http://forums.xamarin.com/discussion/5753/create-ipa-from-vs/p2
I've just pushed a fix for this. Need to do more local testing before handing it over to the QA team.
