While Visual Studio provides support for custom project and item templates, such support does not seem to be available in Xamarin Studio.
There exist multiple locations where Xamarin Studio already stores internally used templates. These can be edited and properly work after editing. However, this does not allow creation of new project and item templates.
The location of existing templates that can be edited is
Start a search for *.xft.xml to find the templates.
There doesn't seem to be documentation about the format used in the templates, but it is relatively easy to understand what tags have to be used.
Note that Code Templates for snippets are available in Xamarin Studio preferences. However, there doesn't seem to be a mechanism currently for project or file templates.
If someone finds a way to change the relative path of the project by hacking the templates, feel free to share :-)
You can create addins that add templates, though ironically there's no template for an addin that adds templates.
Here's an example: https://github.com/mono/monodevelop/blob/master/extras/OpenOfficeSamples/OpenOfficeSamples.addin.xml
Here's a guide to creating an simple addin: http://monodevelop.com/Developers/Articles/Creating_a_Simple_Add-in
Though I'd now recommend using the "Addin Maker" addin which is available in the addin manager.
