After updating to Xamarin Studio, I do not have a Project menu->iPhone Simulator Target option. Now, below
the menus, I have the Debug option and from there I can now select all the different options (see the first screenshot attached). But, as you'll see from the second screenshot, I don't have an "iPhone Simulator Target" option on the Project menu. Able to change the iOS simulator target via Options->Build->iPhone Build and from Run->Run With.

This has been replaced by the combo box on the main toolbar.

This bug was marked as fixed for Xamarin Studio 4.0.9, which is currently in the beta channel. Try it out!
